Size Matters! December 12, 2008 I've been looking for a small skillet that wasn't coated with teflon for quite some time. This is just what I've been seeking. Here's my take on this little gem:
Pros:
Just the right size for a single egg for breakfast or for cooking a small amount of onions or just about anything that would be too small in quantity to cover the bottom of an 8" skillet. Hooray!
Preseasoned pan with no teflon. Coat with olive oil after each use and you're good to go. The problems with teflon are well known, but manufactures persist in using this toxic material to make pans non-stick. This pan is also non-stick but lacks the toxic residue possible from teflon-coated pans. Double hooray!
Cons:
You've got to be a little more thoughtful about caring for this skillet than you are with the pans that are found in most grocery and big-box stores. But that care requires more thoughtfulness than a big investment of time.
Conclusion:
For small jobs, this is the pan. No toxic residue, no overcooked items . . . fills the bill exactly.

Food tastes so much better than any other pan. Cleans easily, I coat my with olive oil after each use. Won't go back to the teflon pans.

I love, love, love this pan. It is the perfect size when you are cooking for one. I can make one or two eggs, a burger, a grilled cheese sandwich, one biscuit, and a small frittata. It's pre-seasoned and clean up is quick. The first time i used it, the eggs did stick. But I scrubed it with a paste of kosher salt and oil(as recommended by Cook's Illustrated), washed it off, oiled it up and it has been non-stick ever since.

Yes, it's small and cute! Perfect for a single person cooking one chicken breast, one fried egg, one garden burger,or one salmon patty. Why wait for a huge heavy skillet to warm up? I love the preseasoning, but consider it just a beginning, getting you to that excellent patina that much faster! I definately would recommend it.
