Well, stainless is a product that is said to not cause any harmful effects. We will see what the 'scientists' say in the next 5-10 years.
Plastic is said to not be safe for hot liquids or at all any more. Go figure since everything we have is plastic!
Aluminum bottles typically contain plastic linings on the inside of the aluminum, so they are not safe from plastic woes and should not be used with hot liquids.
We got rid of our BPA-riddled Nalgene bottles (recycled), and then found out about the Aluminum-plastic issue and we want to take hot liquids. Also, we have a case Nalgene Cool Stuff Neoprene Carrier 32 oz for the outside of the Nalgene from the plastic-bottle days, so that's nice. Also the tapered edge means that this bottle fits in our Honda Fit or our Toyota 4Runner. Yay! Additionally, we can use the sippy tops that we used with the original Nalgenes Guyot Designs SplashGuard-Universal

Solid Bottle February 2, 2010 Tactical Tradecraft (Arizona) The Guyot Designs Stainless Steel Water Bottle, The Backpacker model, is a heavy duty solid water bottle that will hold 32 ounces of water. The bottle is made of 18/10 surgical grade stainless steel. You have the ability to boil water if needed provided that you remove the cap and lanyard. Remember, the bottle will be hot so use something such as a folded bandana or gloves to remove the bottle from the fire or you will get burned. The GSI Outdoor Glacier Bottle Cup / Pot - 18fl oz nests very well in the bottom of this bottle making it a nice system to use. I then put it in Maxpeditions' 10" X 4" Bottle Holder.
This bottle is sturdy so it weighs more than aluminum or plastic but I believe that it is also much more durable. It comes back to the cost/benefit ratio of gear. What is it worth to you to have the extra weight vs. a durable bottle that you can use to boil water?
It has never leaked from the top and this bottle has held up very well. I recommend the Guyot Designs Stainless Steel Water Bottle, The Backpacker model.
Great Bottle January 3, 2010 Michael D. Hines (Lehighton, PA USA) I have owned this bottle for a few months and I love it, only small problem i had was figuring out how to undo the string to get the lid off. Witch does come in handy sometimes like if you need to boil water in an emergency or a quick trail break of coffee, tea, or hot chocolate. Grabbing one of these is not a bad idea I only wish i had seen this lower price before I purchased mine elsewhere, but thats life, Guyot Designs hit the nail on the head wiht this
one.
Great bottle September 30, 2009 Sweet Cheetah (Omaha, NE) Got the backpacker and use splashguard w/it. I drink out of it all day. Fits in car cupholders. I was worried that it would be tippy, but isn't. Love it so much more than the siggs I've had.

I bought my bottle at a shop (read: not Amazon) and received it a few days ago. There are things that I liked about this bottle and there are things that I don't like.
The design and construction of this 38 oz bottle is excellent. It feels durable and tough as (if not a bit tougher than) the plastic ones. It does flex a tiny bit when pressed hard. I get the feeling it'll scratch if I drop it on concrete. It is mostly everything you'd expect from it in person: visually very appealing, voluminous, (the cap seals tightly (no leaks thus far), it conducts temperature very well (temperature felt outside is literally temperature of liquid), and has a reasonable weight. There are engravings on the bottom of the bottle indicating volume, brand, warnings (for hot liquid), washability, and other proclamations (like "ethically manufactured in china", "18/10 Surgical grade stainless", etc.
Surprisingly, the flexible tether is a nice change because it can freely rotate, bend, and flex (as opposed to the plastic tethers on a Nalgene.)
In addition to these great qualities, there are obvious(and not so obvious)advantages for buying this SS: 1) No BPA- obvious reason 2) 100% recyclable 3) Carbon negative (as they claim) and 4) Use it to boil water--because it is metal (like your pan or kettle) it conducts heat really well and in camp situations, this may come in handy.
Besides these great attributes, there are not-so-great attributes: 1) It conducts heat really well--this means that you can't have your hot tea or coffee and hold this bottle at the same time without burning your hand 2) Though minor, the climbing-grade rope tethering the cap to bottle soaks water--annoying since it will drip a bit of water 3)Expensive- though I found a deal on it, it still cost me approximately a whopping $30 in the end (b/c of s/h) and 4) THERE IS AN ODIOUS SMELL--this is by far the most aggravating and disappointing aspect of the flaws. The smell comes from the inside of the bottle; it smells like metal. The smell is so awful that I have hesitance in drinking the water. I have washed it with soap, rinsed it out several times and wiped down the inside of the bottle several times, but the smell persists. On several of the wipe-down occasions, I noticed a grey residue come off on the towel. This volatility of residues is probably the cause of the smell and may come off as it is washed more.
All in all I really wanted to like this bottle, but as it stands, it's just an OK one. I see the environmental impact of this bottle as the main attraction, otherwise it is quite less practical when compared to plastic: insulates better, doesn't smell, is transparent, is lighter, and less expensive. However, if I were to redo the purchase, I would still buy a metal container (I'm a sort of environ-nut), but it would be another brand.
